For me, this whole sentiment also applies to my DAW software. I used Reaper or over a decade, and finally realized that the sheer number of options to do everything and then some, were actually holding me back. Now I'm using Reason, and while there is a lot of discussion about all the things that are seemingly missing in Reason, I actually like it that it isn't bloated with a million options and functions, and instead does the fundamental DAW functions extremely well. It makes me focus on the music making process instead of 'how to do things' in the software.
As for fewer plugins, I have close to 500 rack extensions , so that is still an issue. I already uninstalled a bunch (the Reason companion makes that a lot easier), and when I install R13 I will have a device tag to hide even more stuff.
